It sounds like you are using an Apple iPhone and have the Apple iMessage service enabled. I know that when you enable iMessage, it allows you to send messages to/from email addresses for users who are using non-telephone devices (iPad, iPod Touch, etc.). Those users would not have a phone number associated with their device, so it needs some way to identify them. Apple chose to use your email address for that. If this is the case, you can just go into the settings, and remove all options but your phone number as the "send from" choices.
